Missing Mom
March 11th marks the eight year anniversary of the passing of my husband's Mom, Irma Savard. To honour her, I decided to hit the kitchen and cook. Sadly, I never got to meet my Mother-In-Law but got to spend time with Ron, my Father-In-Law and through him, is how I got to know Irma best. I'm cooking her lasagna recipe from her copy of a cookbook which was prepared by the staff of the MacDonell Memorial Hospital to celebrate their 25th anniversary.

Stoney Point - March 8, 2015 - March 11th marks the eight year anniversary of the passing of my husband's Mom, Irma Savard.

She contributed many recipes and the book was used often evidenced by the stained pages. The lasagna has side notes as she adjusted the recipe at some point and there are other notations throughout the book. I'm also baking a recipe she flagged by Lynn Powell which is an apple sour cream crumble pie.

Flipping through the book makes me smile. I think she's made the macaroni and cheese salad a few times because there are substitution notes and the page is greatly stained and other pages stick -- it's wonderful. I'm including the lasagna recipe with Irma's written substitutions. The boys are helping me bake the pie this afternoon so we will post some pictures and the Lynn's recipe later.

Thank you Irma, you are greatly missed.

Lasagna

1 pkg oven ready lasagna noodles
2 small cans tomato paste
14 oz tomato sauce
10 oz can mushrooms
2 lb hamburg
1 lb sliced pepperoni - 1\4'd
1 green pepper
Oregano, cayenne pepper, onion and garlic salt to taste
1 lb mozzarella cheese
1 lb cheddar cheese

Slice pepperoni in thin slices, dice peppers and grate cheese. Brown hamburg, add canned goods then pepperoni and green peppers to sauce. Bring to boil, simmer for 1 hour. Cook noodles according to directions. Empty small layer of sauce and then layer of noodles (1\2 the noodles) then half of each cheese. Add other half of noodles, sauce and cheese. Bake at 350 degrees for 1\2 hour.
