Gold Medal Breakfast - Go Canada Go
I'm not going to reinvent the wheel and simply redirect you to my Eggxactly recipe with a batch of Caesars while we watch Team Canada take gold against Team Sweden in Olympic Hockey. I've added a great Low Fat Raspberry-Corn Muffin you can make the night before if you wish so depending on your taste buds Sunday morning, you can choose your poison. Nice to have options if you have guests joining you. I'd add a bowl of mixed fresh fruit and you're golden.

Muffins

Oven at 375
Makes 12

1 1/2 cups of all purpose or quinoa flour
2 1/2 cups of yellow cornmeal
1 cup of coconut sugar (3/4 cup from the 1 cup for egg whites)
1 tablespoon of baking powder
3/4 teaspoon of salt
2 cups of buttermilk
2 teaspoons vanilla extract
1-2 teaspoons of grated orange zest
4 large egg whites
2 cups frozen raspberries

Line muffin tin with paper liners

Whisk all dry ingredients in one bowl (sugar staged as above) and wet ingredients in another except eggs.

Beat egg whites and sugar until stiff peaks form (about 7 minutes). Whisk wet ingredients into dry until just moistened. Gently fold in egg white mixture. Do not over mix.

Divide into cups and cook for 30-35 minutes (until toothpick comes out clean). Remove muffins from pan and cool on a rack.

GO CANADA GO!!
