Purple beauties - potato and beet salad
We still have some purple beauties so I decided to make another salad with a bit of a spin using beets. The colours meld beautifully with purple and purple and I thought I would go lighter with no mayonnaise and use a bit of oil instead. Seeing I'm using our garden bounty, I used wild garlic instead of traditional onion.

Stoney Point - July 22, 2013 - We still have some purple beauties so I decided to make another salad with a bit of a spin using beets. The colours meld beautifully with purple and purple and I thought I would go lighter with no mayonnaise and use a bit of oil instead. Seeing I'm using the garden bounty, I used wild garlic instead of traditional onion.

500-600 g of new potatoes (quartered and boil about 15 minutes until fork tender). Put aside to cool in strainer.

Dressing
4 tablespoons olive oil
1 teaspoon dijon mustard
2-3 finely grated garlic cloves (or three tablespoons of chopped chives)
Half a squeezed lemon
1/4 chopped red onion (if you do the chive version)

Roast ten baby beats (I sprinkled with a bit of white vinegar and a spray of olive oil). Bake at 375 until tender

Quarter cooked beets and put in bowl. Quarter potatoes and add to bowl. Whip up dressing and add to bowl and toss together. Toss in red onion. Season with salt and pepper.
